Ryan is the driving force behind some of London’s best loved and most awarded bars – including the legendary and now defunct White Lyan in Hoxton and Lyaness at Sea Containers London (formerly known as Dandelyan). Ryan’s first venture outside of London, Super Lyan at the Kimpton De Witt will be followed by another bar project slated to open in Washington DC later this year.

During the interview, Ryan shares what it is that inspires him in Amsterdam and why Super Lyan is the bar that comes closest to being his dream venue.
